Well, I had a moment's genius...

1. Export your key bindings to a file (in Advanced Settings).
2. Edit the file with Notepad, searching for all instances of the shortcut you want to unbind/change (here: Ctrl+Alt+S/X/C respectively).
3. Change the value found to "noValue".
4. Save.
5. Import settings (in Advanced Settings).
6. Enjoy!

If anyone has other ideas, less "take that club and hit'em software hard" in approach, I will be glad to hear.
